A frittata is basically an omelet. You beat the eggs until blended, mix the rest
of the ingredients in and pour the whole concoction into an oiled cast iron
skillet. You can use broccoli, cauliflower, peas, corn, bell peppers, tomatoes
and so on. I tend to use some frozen veggies like peas and corn which I defrost
in the microwave for a minute. I am fine with previously uncooked fresh
broccoli, cauliflower and bell peppers cut into small pieces.
You can add any cured deli meats and / or pre-cooked sausages cut into small
pieces into the mix.
The best thing is you clean up your fridge and fold your leftovers into this
frittata. I mean left over roast chicken, steak, pork chop etc. Dice it and
throw it in.
Cover your pan and put it on the stove top, or stick it into a pre-heated 325
degree F oven. Cook, or bake until the eggs firm up. Stick under the broiler for
3-4 minutes to brown the top.
