CROSTINI Crostini are the Italian version of open sandwiches. They can be topped with
whatever grabs your fancy.
On the left we have baguette rolls topped with a bruschetta mix. Technically,
the bruschetta toast is rubbed with garlic, but the mix is the same.
On the left, seedless rye bread topped with pesto alla Genovese.
The bruschetta mix consists of diced tomatoes and chopped onions tumbled in a
bit of olive oil,
The pesto consists of a mix of European pine nuts, garlic, Parmigianino
Reggiano (or other hard cheese), basil leaves and coarse salt. Blend them until
you like the texture. Play with the quantities, it's more fun that way (just
easy on the salt and garlic, you can always add more but you cannot remove
them).
