TZATZIKI
Ingredients:

2 cups grated cucumber (from about 1 medium 10-ounce cucumber, no need to peel or seed the cucumber first, grate on the large holes of your box grater)
1 1/2 cups plain, whole milk, Greek yogurt
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh mint and/or dill
1 tablespoon lemon juice
4 medium cloves garlic, pressed or minced
1/2 teaspoon fine sea salt


 
Tzatziki is a Greek dip/sauce that works very well with a variety of dishes. There are variations of it all over the Middle East and some as far as India. I first taste it in a Greek restaurant which is why I picked this name. I have tried to make it in the past but something always seemed to be missing. This is the first time that I really loved how it came out. So here are the ingredients and the steps I took to make it.

Preparation:

Squeeze water from cucumber over sink gently.
Blend everything and taste.
Add whatever you think necessary.
Garnish with a sprig of mint and some dill
Let it sit for 10 minutes before serving.
